My niece is starting her freshman year of college. She packed her books to take and texted me that she had her Bible, apologetics books, and Jane Austen books, and asked if that was enough. I said that's pretty much the essentials.
Here are the apologetics books she packed because she thought they were good preparation for college:
Tactics (of course, she'd be disowned otherwise)
Dear Friend: Letters to a Christian Ambassador
C.S. Lewis collection
And she has Doug Powell's iWitness app collection on her iPad.
Of course, there are lots of other great books to prepare Christian college students for challenges, but these are a great start.
She should add Love Your God With All Your Mind. There's some good stuff in there. Lots of stuff on scientism and self-refutation.

Wonderful picks. I would also suggest:
What We Can't Not Know, by J. Budziszewski;
Soul Searching, by Christian Smith;
How to Stay Christian in College, by J. Budziszewski
From the non-apologetic side, I'd suggest:
A Whole New Mind: Why Right-Brainers Will Rule the Future, by Daniel Pink;
The Gift of Fear, by Gavin De Becker, (especially for females);
The Case Against Adolescence, by Robert Epstein
